Hey y’all! I’m Kalie and I can’t wait to share my love of all things food with you!
I’m a Registered Dietitian with a long time passion for child nutrition, a new found passion for sustainable foods, and a forever passion for delicious food! Three meals a day simply wasn’t enough. I needed to spend 4 years studying nutrition, 1 year in an unpaid dietetic internship, and 1 million dollars in student loans (only a slight exaggeration…) just so I could spend every day talking about food… So that I could start this blog and talk about food some more… okay now I’m kind of embarrassed.
Luckily, I live in a fantastic place to satiate my obsession- Asheville, North Carolina! Local, delicious, vegetarian friendly
beer food at every corner. My boyfriend of four years, Jono, lives here too and is definitely more into the beer scene than the vegetarian-food scene. He is a carnivore, you see. A hunting, fishing, meat loving carnivore. I was literally worried he might break up with me when I told him I was going vegetarian. But no, he’s the best and has been totally supportive every day. He may be a little skeptical of my veg-filled versions of classic meat meals at first, but he’s never disappointed!
I’ve been a vegetarian for a little over two years now. I have definitely said more than once in my life, “But there’s just no way I could give up grilled chicken.” But the more I learned about the impact the meat industry has on the environment and on our health, the less and less meat I ate until I went fully vegetarian. Once I found meatless substitutions for my favorite meals, it was so much easier. It just takes a little creativity and motivation, but keeping that up 24/7 isn’t always easy so I found myself craving a little flexibility.
Which is where FLEX YOUR FORK comes in!! I truly believe that it is imperative to our environment and to our health to eat LESS meat. Although I have chosen to give it up fully for the time being, I want to encourage anyone I can reach to simply eat less. To be informed and conscious of what makes up their meal and to move towards a more plant-based diet. I aim to provide the tools (recipes, resources, evidence based research, etc) to make the most carnivorous human… into a flexitarian! By giving yourself the freedom and the space to be flexible you are much more likely to succeed. Because life is meant to be lived and enjoyed! …in moderation. (Bet you’ve never heard a dietitian use that word before 🙂 )
So I want to share how I live and enjoy my life with you!
